Grapes sourced from the “El Pinche” estate, planted at an altitude of 415 meters on a south-facing hillside with a slight westward orientation, protected by the Sierra de Codés. The uniqueness of the terroir gives the wine its elegant character.

PRODUCTION AND AGING

Gentle, firm but light destemming means that the grapes were not damaged in any way and the organoleptic qualities remain intact. Alcoholic fermentation in temperature-controlled tanks from the moment of reception. It lasts 9 days, with pumping over and punching down according to fermentation needs. Post-fermentation maceration for 7 days. Minimal intervention oenology, specific to this wine during its stabilisation and ageing. Racking and ageing in barrels for 11 months. A total of 18 new barrels from 7 different cooperages (70% French – 4 cooperages and 30% American – 3 cooperages), composed of up to 9 different types of origins and toasting levels, have been used in crafting this wine.

COLOR

A wine with a deep, intense robe. Rich, red tones with light purple hues reminiscent of the grape skins.

AROMAS

The bouquet opens up to a wide array of aromas, featuring dried fruits, spices and an anis seed finish.

PALATE

At first, it shows ripe black fruits followed by toasted notes of remarkable complexity, providing soft tannins and a fresh, lingering finish of balsamic and leathery notes. A silky wine, pleasant and long.
